Mexican Corn Soup
Ingredients
- 2 tbsp butter
- 1 yellow or white onion
- 4-5 garlic cloves
- 4 tbsp flour
- Chopped jalapeños for taste
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp salt
- 4 cups chicken stock
- 1/2 to 1 cup milk or cream
- Garnish: sour cream or cotija, cilantro, jalapeño
Instructions
- Sautée onions & jalapeño in butter for 7-8 min
- Add garlic, sautée for 1 min
- Add flour, chili powder, cumin and sautée for 2-3 minutes
- Add chicken stock and let simmer for 10 min
- Add corn and milk/cream and simmer for another 5 min
- If you need to thicken it more add more flour or cornstarch
- Top with garnish
