Butter Chicken

Ingredients
- 1kg boneless chicken thigh
- 1 head of garlic
- red chilli powder
- salt
- pepper
- 2 inch cinnamon stick
- 4 green cardammom
- 1 cup tomato puree
- 1 cup cream
- hung yogurt
- kasoori methi
- lemon juice
- 2tsp honey
Instructions
- Cut chicken into 1 inch cubes.
- Marinate in red chilli, garlic, hung yogurt, salt and ground black pepper. Preferably overnight.
- Heat olive oil in wok on medium.
- Add 2 inch cinnamon stick.
- Add 4 green cardommom (break before to avoid oil splatter).
- Add garlic (microplane, paste or finely chopped).
- Add 1 cup tomato puree.
- Add 2 tsp red chilli powder.
- cook for 2 minutes.
- Add 1 cup cream.
- Add more tomato puree/cream to achieve desired color.
- Add 2tsp honey.
- Add 1tsp salt.
- Stir and taste, add lemon juice if not sour.
- Let the sauce simmer and stir fry the chicken pieces.
- Add the chicken pieces to the sauce.
- Cook kasoori methi separately in a pan and add to sauce.
